Prekmurska gibanica, Slovenački tradicionalni desert - Slovenian traditional dessert "Prekmurska Gibanica"

Listajući kuvar sa Slovenačkim tradicionalnim jelima, za oko mi je zapala Prekmurska gibanica. Reč je o autentičnom kolaču u kom se smenjuju tanke korice od "tegljenog" testa i četiri vrste fila: od maka, sira, oraha, jabuka. I evo... recept je dočekao svoj red za isprobavanje. Zahteva malo posvećenosti i vremena, ali vredi. Dobro sam birala!

Ovo su mere za pleh prečnika oko 27cm, na kom može da se skine obruč, ali i ne mora. Bitnije je da pleh bude dubok 6-8cm. Prvo se zamesi sipkavo testo, koje kasnije služi kao podloga za slaganje gibanice. Zatim se zamesi testo koje se razvlači i koristi se za korice između filova.
Dok testa "odmaraju", naprave se filovi, a posle se slaže u pleh. Malo deluje komplikovano, ali i nije toliko.     

Sipkavo testo: 130g brašna, 70g putera ili margarina hladnog, prstohvat soli, oko 70ml hladne vode. Od ovih sastojaka umesiti glatko testo, po potrebi dodati još malo brašna. Formirati jufku, umotati je u providnu foliju i staviti u frižider na pola sata. 

Testo za "tegljene" korice: 400g mekog brašna, 1 manje jaje, ½ kašike ulja, 1 kašičica šećera, oko 250ml mlake vode. Na radnu površinu prosejati brašno, napraviti udubljenje i u udubljenje staviti jaje, ulje, so, šećer a vodu dodavati postepeno. Ako Vam je lakše, zamesite testo u činiji. Zamesiti testo. Potrebno je testo mesiti sve dok ne postane glatko. Što se duže mesi (5-10 minuta), kasnije će se bolje razvlačiti. Oblikovati jufku (loptu), premazati je sa malo ulja ili masti pokriti providnom folijom i ostaviti na sobnoj temperaturi, pola sata. 

Dok testa odmaraju u frižideru, napraviti filove. Pripremiti 6 činija.

1. Fil od maka: U činiji pomešati 100g mlevenog maka sa 50g šećera i 1 kesicom vanil šećera.
2. Fil od sremskog sira: 400g bilo kog neslanog sitnog sira (takozvani "sremski" ili "švapski" sir) pomešati sa 60g šećera, 1 kesicom vanil šećera, može da se doda i 1 jaje (a ne mora). Ukoliko ne možete da nabavite potpuno neslan sitan sir, neće smetati ako se pomeša 200g rikote i 200g maskarpone sira.   
3. Fil od oraha: 100g mlevenih oraha pomešati sa 50g šećera i 1/2 kesice vanil šećera.
4. Fil od jabuka: 500g narendanih jabuka pomešati sa sveže isceđenim sokom jednog limuna, 60g šećera i 1/2 kesice vanil šećera. Jabuke će pustiti sok, pa je pre filovanja potrebno da se malo iscede (rukom).
5. Fil od kisele pavlake: Pomešati 400ml (2 čaše) kisele pavlake sa 2 žumanca. Umutiti u čvrst šne 2 belanca sa prstohvatom soli, pa i njih lagano izmešati sa kiselom pavlakom i žumancima. Ovim se preliva svaka kora, što znači da će se koristiti osam puta.
6. Preliv: Umutiti 125g kisele pavlake i 1 žumance. Ovim se odozgo preliva složena gibanica. 

Osim toga, potrebno je rastopiti 100g putera, kojim se prskaju kore. Mada, neće smetati ako se umesto putera upotrebi 100g masti ili 100ml suncokretovog ulja.

Slaganje gibanice:

Podmazati pleh ili obložiti papirom za pečenje. Sipkavo testo izvaditi iz frižidera, položiti na dno pleha i rukom rastanjiti. Trebalo bi da debljina korice bude najviše 0.5cm. Ako se učini da će korica biti deblja, treba ukloniti višak testa. Izbockati viljuškom i zapeći 5 minuta na 180°C (da malo porumeni, izgubi se onaj sjaj od masnoće i postane mat). Polu-pečenu koricu ostaviti da se ohladi, ali je ne vaditi iz pleha. 

Testo za "tegljene" korice podeliti na 9 jufkica. Da bi bile približno iste veličine, ja sam odmerila masu testa (ukupno je bilo 665g). Podelila sam na 9 jufkica, od kojih je svaka bila teška 70-74g (merila sam svaku). Radnu površinu ili veću čistu krpu posuti brašnom. Jufkicu posuti brašnom sa svih strana, prvo oklagijom rastanjiti, a zatim rukom razvlačiti do veličine pleha. Može i da se kora stavi na nadlanice posute brašnom, pa laganim pokretima ruku razvući na veličinu pleha. Truditi se da korice ne pucaju, ali čak i ako se to desi, ništa strašno. 

Prvu koricu spustiti preko polu-zapečenog sipkavog testa. Ukoliko korica prelazi rub pleha, iseći je, ili ostaviti tako. Koricu poprskati sa malo rastopljenog putera (ili uljem), nafilovati sa polovinom fila od maka i preliti sa nekoliko kašika fila od pavlake.

Sada razvući drugu koricu, staviti je u pleh, poprskati rastopljenim puterom, staviti pola fila od sira i preliti sa par kašika fila od pavlake.

Razvući treću koricu, staviti je u pleh, poprskati rastopljenim puterom, rasporediti pola fila od oraha i preliti sa par kašika fila od pavlake.

Razvući četvrtu koricu, staviti je u pleh, poprskati rastopljenim puterom, staviti pola fila od jabuka i preliti sa par kašika fila od pavlake. 

Sada ponovimo istim redosledom: korica, puter, fil od maka, fil od pavlake, korica, puter, fil od sira, fil od pavlake, korica, puter, fil od oraha, fil od pavlake, korica, puter, fil od jabuka, fil od pavlake. 

Na kraju, završimo sa poslednjom koricom. Složena gibanica se odozgo prelije prelivom od 125g kisele pavlake u koju je dodato 1 žumance. Na nekoliko mesta je izbockati tankom dugačkom iglom, skroz do dna.  

Peći u prethodno zagrejanoj rerni na 180°C. Vreme pečenja zavisi od debljine kolača, potraje bar 45-60min. Nakon dvadesetak minuta pečenja nije loše pokriti kolač papirom za pečenje (ili aluminijumskom folijom) da ne izgori odozgo. Papir skinuti desetak minuta pred kraj pečenja.

Prekmursku gibanicu ohladiti, seći na kocke i poslužiti posutu prah šećerom. Može da se posluži topla, hladna, a još je lepša sutradan, kada malo otpusti i prožmu se svi ukusi!!!

Napomena: Za dublji pravougaoni pleh dimenzija oko 26x36cm trebalo bi duplirati meru.

Sastojci: 530g brašna, 70g putera ili margarina, 5 jaja, 100g mlevenog maka, 220g šećera, 3 kesice vanil šećera,  400g bilo kog neslanog sitnog sira (takozvani "sremski" ili "švapski" sir),  100g mlevenih oraha, 500g narendanih jabuka, 1 limun, 500ml (2,5 čaše) kisele pavlake,  100g putera (ili 100g masti, ili 100ml ulja).


Slovenian traditional dessert "Prekmurska Gibanica"


Looking through the Slovenian cookbook I have noticed traditional dessert called "Prekmurska gibanica". It is an authentic pie made of strudel dough layers and four different fillings: poppy seeds, cottage cheese, walnuts, apples. And here's the recipe... It requires dedication and some time, but worth it. It's so delicious!!!

The measures are for the 27cm diameter baking tray, with removable bottom (but not necessarily). The more important is that the baking tray is deep 6-8cm.

First, make shortcrust pastry, the base of the pie. Then make the strudel dough, which is used for pie layers. While the dough sets for 30min, make the fillings. It seems complicated, but it isn't!.

Shortcrust pastry: 130g flour 70g cold butter or margarine , a pinch of salt , about 70 ml of cold water . In a large bowl put all the ingredients and bind the dough together. Wrap it in cling film and chill in the fridge for 30 minutes before using.

Strudel dough: 400g flour, 1 small egg, ½ tablespoons oil, 1 teaspoon sugar, about 250ml of lukewarm water. Place the flour in a bowl, add other ingredients. Stir with a spoon until it comes together and you can work it with your hands. Knead the dough until it is smooth and tacky, but not sticky, about 5-10minutes. If you need to add more flour, only add it 1 teaspoon at a time. Form the dough into a smooth ball, brush it with a little oil and place it back in the bowl for 30minutes, at room temperature. Covering the dough with cling film is fine, too.

While the dough sets, make fillings. Prepare 6 bowls.

1. Poppy seeds filling: In a bowl mix 100g ground poppy seeds with 50 g sugar, 1 sachet vanilla sugar.
2. Cottage cheese filling: 400g unsalted cottage cheese (or 200g ricotta+200g mascarpone cheese) mix with 60g sugar, 1 sachet vanilla. Optionally add 1 egg. 
3. Walnut filling: 100g ground walnuts mix with 50g sugar and 1/2 sachet vanilla sugar.
4. Apple filling: 500g grated apples mix with freshly squeezed juice of one lemon, 60g sugar and 1/2 sachet vanilla sugar. Before use, squeeze the apples with hands. 
5. Creme fraiche filling: Mix 400ml (2 cups) creme fraiche and 2 egg yolks. Whisk 2 egg whites with a pinch of salt until soft peaks are formed. Gently fold egg whites into the creme fraiche mixture. This filling is spread on each layer, so it is used eight times. 
6. Final layer filling: Whisk 125g creme fraiche and 1 egg yolk. 
Additionally, melt 100g of butter, or 100g lard, or measure 100ml of sunflower oil .

Assembling the pie:

Take 6-8cm deep round baking tray (27cm diameter) with removable bottom. Grease with som lard or line with baking paper. Put the shortcrust pastry in the middle of the tray and press it with hands to form a 0.5cm layer. If the layer seem to be thicker, remove some pastry. Prick it with fork and half-bake in the oven (5 minutes at 180°C). Let it cool, but don't remove from the tray.

Now, take the strudel dough and divide into 9 balls, of the same size. I have measured the mass of the dough (it was about 665g), so each piece was 70-74g (I have measured each). Dust with some flour the working surface or large clean tea towel.  Take one ball, dust it with flour, roll it with the rolling pin, and then stretch with the hands to the size of the baking tray. Try not to break it, but even if that happens it's not a big deal.

Place this first sheet over the half-baked shortcrust. If the size exceedes the size of the pan, just cut the excess dough. Sprinkle with a few drops (1/8) of melted butter or oil, fill with a half of the poppy seeds filling, and pour few tablespoons (1/8) of creme fraiche filling.

Now stretch the second crust, put it in a baking tray over the poppy seeds and creme fraiche filling, sprinkle with melted butter, put half of the cottage cheese filling, and pour some creme fraiche filling.

Stretch the third dough layer, put it over the previous fillings, sprinkle with melted butter, spread a half of the walnut filling and pour some creme fraiche filling.

Stretch the fourth dough layer, put it over the filling, splash with some  butter, put a half of the apple filling (squeeze the juices) and pour some creme fraiche filling.

Now repeat in the same order: dough layer, butter, poppy seeds filling, creme fraiche filling, dough layer, butter, cottage cheese filling, creme fraiche filling, dough layer, butter, walnut filling, creme fraiche filling, dough layer, butter, apple filling, creme fraiche filling and finish with the last strudel dough layer.

Over the last layer of strudel dough, spread the final layer filling (125g creme fraiche with 1 egg yolk). Prick the pie with the long thin needle all the way to the bottom.

Bake in preheated oven at 180°C. Baking time depends on the thickness of the pie, it takes 45-60min. After the first 15 minutes of baking cover the cake with baking paper (this will prevent burning). Take the baking paper cover for the last 10 minutes of baking process.

Let the pie cool a bit, cut into cubes and serve sprinkled with powdered sugar. It can be served both warm or cold, but the best is the next day. Imagine all those flavours in the same dessert! Awesome!!!

Note: For a rectangular baking tray 26x36cm double the measures.
