Tarana skuvana na mleku, popara, cicvara, kačamak, nekada su bili omiljeni dečiji doručak. Danas nepravedno zaboravljeni. I ja sam se slučajno setila. Bila je subota, deca se probudila i odmah je krenula rasprava oko toga šta će za doručak. Nikako da se dogovore. U nuždi, sine mi spasonosno rešenje. Tarana!!! Pogledali su me čudno i sa nevericom, ali su ipak prihvatili da krenu u kuhinju pošto sam im objasnila da sam ja to baš volela da jedem kada sam bila mala. U dve malo veće činije (da se ne bi prosipalo na sve strane) izručila sam po šolju brašna i razbila po jedno jaje.
Svakom sam dala po jednu činiju. Objasnila sam da treba utrljati jaje u brašno, dlanom o dlan, tako da se naprave mrvice testa. Mir u kući! Deca uposlena, zabavljaju se. Za to vreme stavila sam da provri oko 1l mleka na umerenoj temperaturi. Taranu iz jedne ćase izručila sam u ključalo mleko, uz mešanje varjačom kuvala par minuta. Na kraju sam zasladila po želji, vruću sipala u činije. Čvrsto smo se držali principa da se jede dok je vruće i odmah sve smazali. Onu drugu ćasu sa testeninom ostavila sam da se malo prosuši na vazduhu, spakovala u činiju sa poklopcem, stavila u frižider, spremila odmah sutradan jer se svima jako dopalo.
Mada je metoda "utrljavanjem dlanom o dlan" najbrža i najzabavnija, karakteristična zrnca mogu se dobiti rendanjem jufke testa, pa čak i seckanjem. Ako planirate da seckate ili rendate, prethodno je potrebno od jaja i brašna umesiti glatko, malo tvrđe testo.Vrlo je zgodno napraviti veću količinu (od 3-4 jaja). Mrvice rasporediti po čistoj krpi, ostaviti da se prosuše na vazduhu, zatim spakovati u kesu, odložiti u zamrzivač, upotrebiti u roku od mesec dana.
Tarana može da se pripremi i kao slani obrok, obari se minut-dva u dosta slane vode, procedi, pa se proprži na masti ili na puteru, uz dodatak sira, kajmaka, milerama...
Sastojci: 1 jaje, šolja brašna, oko 1l mleka, par kašika šećera.
Tarana (Egg barley, traditional kid's breakfast in Serbia)
Tarana (Egg barley), popara (made with leftover bread), polenta... once favorite kid's breakfast meal in Serbia, today almost forgotten. I hope this text would be "the oblivion saved". It was Saturday, the kids woke up and immediately started discussion about what would they like for breakfast. Of course, they couldn't agree. As an emergency I found a solution: Tarana! What a funny name they said. It is a meal that I liked to eat as a little girl, I explained, so they came to the kitchen. I took two large bowls (to avoid the flour dusting all over), put one cup of flour and cracked one egg, in each. Each got one bowl. The instruction was the simplest possible, to rub the egg into the flour, with hands, make a pasta grains. What a funny task! Meanwhile, on a medium heat bring 1l of milk to a boil. Add egg barley from one bowl to the milk, stirring with a wooden spoon, cook for 2-3 minutes. At the end add sugar to taste, stir to dissolve and divide to serving dishes. Eat immediately, while warm. Egg barley from the second bowl should be dried a bit on the air, packed in a plastic bag and put in a fridge, for the next day breakfast. Everybody liked it.
Although the "rubbing" method is the fastest and the most fun, grains could be formed also by chopping or grating. But first, knead a ball of egg and flour pasta dough. Make a larger amount (3-4 eggs), let the grains dry a bit, then pack in a plastic bag, place in a freezer and use within a month.
Tarana (Egg barley) can be prepared as a savory meal, boil for 1-2 minutes in a salted water, drain, and then fry in some lard or butter, top with cheese, sour cream, kaymak...
Ingredients: 1 egg, a cup of flour, 1l milk, sugar to taste.
