Urnebes salata - "Urnebes" salad or spread: one simple and versatile traditional recipe

"URNEBES", čim se izgovori, zrači vedrinom, izmami širok osmeh... 

Urnebes salata je posebna baš zbog svoje jednostavnosti i zato što svaki zalogaj vraća u detinjstvo. Dobar sir, paprika i malo ljubavi — dovoljno da nastane ukus koji se pamti.

Najčešće se pravi od starog punomasnog sira (ovčiji, kravlji, kozji), koji mu daje onaj pravi, autentičan ukus. Ako nema tradicionalnog sira, odlična zamena je i feta.

Priprema je vrlo jednostavna i sastojci se dodaju "po ukusu". Viljuškom dobro izgnječiti par kriški odabranog sira. Dodati ljutu tucanu papriku i malo slatke "aleve" paprike, pa sve dobro sjediniti viljuškom, dok se ne dobije ujednačena masa. Izručiti u činijicu i poslužiti.

U modernoj varijanti može da se doda i malo krem sira, kisele pavlake ili milerama, da bi se dobila još kremastija struktura. Ova verzija je posebno zgodna ako se pravi namaz. Ovim se ne menja osnovni karakter recepta — prepoznatljiv ukus ostaje u prvom planu.

Nema potrebe dodavati kajmak, ajvar ili ulje. 

Ako spremate deci, izostaviti ljutu papriku ili dodati vrlo malo. Mada, ima malih gurmana koji vole ljutkasto.

Stari sirevi prirodno su dovoljno slani, pa dodatno soljenje uglavnom nije potrebno. Ako je sir previše tvrd i teško se povezuje, može se dodati malo kisele pavlake ili milerama, da bi se dobila lepša tekstura.

Poslužiti uz različite vrste mesa - roštilj, pečenje, suhomesnati proizvodi... ili uz različito povrće, bilo da je sveže ili pripremljeno na neki drugi način. 

Urnebes namazan na krišku svežeg hleba, uz tek ubran paradajz iz bašte - izuzetan doručak ili večera. tarog ovčjeg sira. 

Može se oblikovati u kuglice - takav način serviranja deca posebno vole. 

Urnebes nije samo salata, to je ukus doma, tradicije i uspomena koje se prenose sa generacije na generaciju.

"Urnebes" in Serbian, means something hilarious, funny or entertaining. It carries a sense of joy and cheerfulness - a perfect name for a dish with such a lively personality.

Urnebes salad is special because of its simplicity. Every bite has the power to bring back childhood memories. Good cheese, paprika and fun - that is all it takes to make it. 

This salad/spread traditionally is made with aged full-fat cheese (sheep’s, cow’s, or goat’s cheese), which gives its authentic and distinctive flavor. If traditional cheese is not available, feta cheese makes an excellent substitute.

The preparation is very simple, and the ingredients are added "to taste". Mash well a few slices of your chosen cheese with a back of a fork. Add some crushed hot red pepper flakes and a few pinches of sweet paprika, then combine everything with a fork until you achieve a smooth texture. Transfer to a serving bowl and enjoy.

In a modern version of the recipe, a little cream cheese or sour cream can be added to create an even creamier texture. This version is especially suitable when serving urnebes as a spread. These additions do not change the essence of the recipe — the recognizable cheese and paprika flavor remains the star.

There is no need to add kajmak (traditional Balkan dairy spread), ajvar (traditional Balkan roasted red pepper spread), oil, or any other ingredients.

When preparing Urnebes for children, simply leave out the hot pepper flakes or use only a very small amount. Although, there are some little food lovers who enjoy a gentle spicy kick.

Aged cheeses are naturally salty, so additional salt is usually unnecessary. If the cheese is too firm and difficult to combine, add small amount of sour cream to achieve a smoother texture.

Serve Urnebes alongside different types of meat — grilled dishes, roasted meats, cured meats — or with a variety of vegetables, whether fresh or prepared in another way.

One of the simplest and most beloved ways to enjoy it is spread on a slice of fresh bread and served with a freshly picked tomato from a garden. It makes an exceptional breakfast or dinner — a combination that instantly brings back memories of home and carefree days.

Urnebes can also be shaped into small cheese balls, a serving style that children love the most.
